Job Title: Head Chef
Job Location: Phnom Penh
RESPONSIBILITIES:
- Supervise & ensure that kitchen is ready for service on time
- Ensure culinary standards. Maintain high levels of cleanness at all time in the kitchen.
- Monitor daily work assigned to staff ensuring guidelines are followed. In case of deviations, take corrective measures.
- Check daily all storage areas & prepare the orders in accordance to the volume of business.
- Ensure care & orderly handling of all food production, and maintain the standard
- Check whether quantities prepared are according to recipes & specifications. Control food & operating costs by reducing wastage
- Create regularily new & different recipes. Prepare the food cost and suggest selling prices
- Coach & maximize employee moral & productivity, and punctuality
- Train the culinary employees in all sections of kitchen in the skills necessary for them to perform their function to the highestpossible standards
- Ensure that all employees provide a courteous & professional service at all times
- Build of an efficient team of Employees by taking an active interest in their welfare, safety & development
- Supervise the Employees within the department, ensuring that the correct standards & methods of service are maintained
- Evaluate monthly kitchen employees and instruct them on how to improve their level.
REQUIREMENTS:
- Experienced in kitchen operations including stock management
- Sound knowledge of operational controls and menu creating
- Excellent food cost controls and ability to continually raise standards
